Seared Sesame Encrusted Tuna w/Mango Slaw
INGREDIENTS
MANGO SLAW
- 1 firm Mango (shredded or fine julienne)
- 1/4 C chopped cilantro
- 2 oz Sambucca or Pernod
- 1/2 Red Onion, julienned
- 2 Green Onions, chopped
- 1/2 Red Pepper, julienned
SEARED SESAME ENCRUSTED TUNA
- 1-2 lbs. piece of Tuna i.e. Wild Yellow Fin
- 1/8 C White Sesame Seed
- 1/8 C Black Sesame Seed
- Splash Sesame Seed Oil
PREPARATION
MANGO SLAW
- Mix slaw ingredients and allow to sit for at least 1 hour.
(Note: As a Sambucca substitute, you can make a simple syrup by simmering and reducing equal parts water and sugar with a star anise)
SEARED SESAME ENCRUSTED TUNA
- Cut Tuna in 1" steaks. Lightly coat in Sesame Seed Oil and roll to cover ends in mixture of sesame seeds.
- Grill on hot grill for 3 minutes per side. Vary the amount of cooking depending upon how rare you like your tuna.
ASSEMBLY
- Slice tuna and serve with mango slaw.
