Blackened Catfish
INGREDIENTS
CATFISH
- 4-6 ounces of Fiery Spice (or Cajun spice blend)
- 2 oz butter
- Diced garlic
- 5 oz catfish filet
SHRIMP NAWLINS
- 2 oz medium salsa
- 2 shakes of Tabasco Chipotle Pepper Sauce
- 1/2 oz liquid smoke
- 3 Tbsp Fiery Spice (or Cajun spice blend)
- 5 large shrimp
MANGO CHIPOTLE SAUCE
- 1 C mango chunks, pureed
- 1 tsp ground Chipotle
- 2 tsp vinegar
- 1 tsp salt
- 1 tsp sugar
PREPARATION
CATFISH
- Wash and clean catfish.
- On a plate, spread spice.
- Press both sides of catfish in spice.
- On a hot BBQ giddlepan, heat butter and garlic. (butter should sizzle)
- Gently place spiced catfish on BBQ Griddle. Cook for 3-4 minutes per side.
SHRIMP NAWLINS
- Peel and de-vein shrimp.
- On medium BBQ grill shrimp until done (2-3 minutes). Shrimp will turn pink.
- In a saucepan, add above ingredients.
- Heat and mix well. Toss with shrimp.
MANGO CHIPOTLE SAUCE
- Blend ingredients in food processor.
ASSEMBLY
- Serve mango chipotle sauce over grilled fish and shrimp.
