Seafood Antipasti with Lemon Basil Dressing

INGREDIENTS

LEMON BASIL DRESSING

  • 1/3 C fresh lemon juice
  • 1 tbs lemon zest
  • 1/3 C balsamic vinegar
  • 1 C extra virgin olive oil
  • 1 tbs Dijon mustard
  • 2 tbs honey
  • 2 bunch basil
  • 3 drops tobacco
  • Sea salt and fresh cracked pepper to taste

SEAFOOD ANTIPASTI

  • 8 large scallops
  • 8 large shrimps
  • 1 lb mussels
  • 4 slices Pancetta

PREPARATION

LEMON BASIL DRESSING

  1. Puree all ingredients together. Set aside.

SEAFOOD ANTIPASTI

  1. Skewer scallops & shrimps separately & grill on medium for approximately 3-4 minutes per side.
  2. Grill Pancetta until it is crisp.

ASSEMBLY

  1. Place scallops and shrimps on a platter, garnish with crispy pancetta and drizzle with dressing.
