Seafood Antipasti w/Lemon Basil Dressing
INGREDIENTS
LEMON BASIL DRESSING
- 1/3 C fresh lemon juice
- 1 tbs lemon zest
- 1/3 C balsamic vinegar
- 1 C extra virgin olive oil
- 1 tbs Dijon mustard
- 2 tbs honey
- 2 bunch basil
- 3 drops tobacco
- Sea salt and fresh cracked pepper to taste
SEAFOOD ANTIPASTI
- 8 large scallops
- 8 large shrimps
- 1 lb mussels
- 4 slices Pancetta
PREPARATION
LEMON BASIL DRESSING
- Puree all ingredients together. Set aside.
SEAFOOD ANTIPASTI
- Skewer scallops & shrimps separately & grill on medium for approximately 3-4 minutes per side.
- Grill Pancetta until it is crisp.
ASSEMBLY
- Place scallops and shrimps on a platter, garnish with crispy pancetta and drizzle with dressing.
