Super Bowl Rockfish Tacos
Serves 6 wild football fans
Ingredients
TACOS
- 2 lbs rockfish (wild striped bass)
- 1 stack of authentic tortillas from the local bodega
- 2 large avocados, sliced
- Salt and pepper
- sprinkle of cilantro
ROOT VEGETABLE SLAW
- Your favorite hot sauce aioli
- Garden lettuces (tatsoi, mizunas, bibb lettuce, and arugula would all be nice greens to use)
- Fresh garden carrots, beets, and radishes
- Olive oil to taste
- Lemon juice to taste
- Cilantro to taste
SPICY MAYO
- Mayonnaise (homemade preferred)
- Hot sauce to taste
Preparation
TOPPINGS PREPARATION
- Slice Rockfish across the filet in ¾-inch-thick pieces. Sprinkle it with salt and pepper and set aside.
- Prepare a plate with a warm water-dampened cloth for your tortillas after you warm them on the grill to keep them moist.
- For the Root Vegetable Slaw, clean and peel each vegetable as necessary. Julienne the carrots, beets, and radishes. Mix with some olive oil, lemon juice, and fresh chopped cilantro to your taste preference.
- For the Spicy Mayo, add your favorite local hot sauce into the mayonnaise.
COOKING/ASSEMBLY
- Spray your Crown Verity grill with a non-stick spray. Lay your rockfish skin-side down on the hot grill gates. Grill the tortillas, cooking them in batches, keeping the warmed ones under the warm cloth waiting on the second tier of the grill.
- Assemble your ingredients and make your tacos, layering the green lettuce, crispy rockfish, zesty slaw, creamy avocados, and spicy mayo all in a warm tortilla.
