Prosciutto Wrapped Sea Scallops On Skewers

INGREDIENTS
SMOKED PROSCIUTTO WRAPPED SEA SCALLOPS
- Large sea scallops
- Smoked prosciutto
- Rosemary sprigs
- COCKTAIL SAUCE
- 1/2 C ketchup
- 1/3 C horseradish
- Juice of 1/2 lemon
- Dash of Tabasco
CHORIZO SAUSAGE STUFFED SHRIMP
- 1 lb Large shrimp, raw, shell off and de-veined, tail on. (12-15 per lb.)
- 1 Chorizo sausage, cut in 3/4” rounds
- Sage leaves
PREPARATION
SMOKED PROSCIUTTO WRAPPED SEA SCALLOPS
- Wrap sea scallops in smoked prosciutto.
- Strip bottom leaves of rosemary from stem.
- Skewer through scallops to secure prosciutto.
- Grill 2-3 minutes per side.
COCKTAIL SAUCE
- Mix ingredients to taste.
CHORIZO SAUSAGE STUFFED SHRIMP
- Wrap sage leaf around sausage and place inside large shrimp, skewer like a lollypop.
- Grill 2-3 minutes per side.
