Breakfast Bread Pudding
INGREDIENTS
- 1 loaf of day old French bread, cut into ¾” cubes
- 4 small or 2 large cooked sausages, cut into small ¼” rounds
- ¼ C sweet onion, chopped
- 4 eggs
- ¾ C milk
- 1Tbsp fresh chopped thyme dried
- dash of kosher salt
- ¼ Tsp fresh ground pepper
- ¼ C diced red pepper
PREPARATION
- Spray muffin pan with non-stick cooking spray.
- In a large bowl combine cubes, onion, and sausage.
- In another bowl whisk together eggs, milk, salt, pepper and thyme.
- Pour egg mixture over bread, stir together and let soak into bread for 5 minutes to absorb.
- Spoon into muffin tins and bake on the top rack of a 350 degrees BBQ for approximately 20 minutes, until the egg sets or sides and tops are golden brown.
