Beef Tenderloins w/Garlic & Red Wine
INGREDIENTS
BEEF TENDERLOINS
- 8 oz. Beef tenderloin steak
- ½ Tsp roasted garlic
- 1 Tsp red wine
BLUEBERRY REDUCTION
- ½ PINT fresh blueberries
- 2 Tbsp water
- 3 Tbsp red wine vinegar
- 3 Tsp sugar
PREPARATION
BEEF TENDERLOINS
- Mix roasted garlic and red wine together. Place in infuser.
- Inject mixture into several different places on the beef tenderloin.
- Allow to infuse for 4-5 hours or overnight.
- Grill steak, on medium heat, for 4-5 minutes a side for rare.
BLUEBERRY REDUCTION
- Place blueberries, water, sugar, and red wine vinegar in a small sauté pan.
- Cook over high heat until blueberries are soft.
- Remove blueberries. Set aside.
- Reduce remaining liquid until it thickens slightly. Set aside.
ASSEMBLY
- Spoon 2-3 oz. of blueberry reduction on plate.
- Place steak on sauce, surround with vegetables and potatoes.
- Sprinkle reserved blueberries over steak.
