Beef Tenderloins w/Garlic & Red Wine

INGREDIENTS

BEEF TENDERLOINS

  • 8 oz. Beef tenderloin steak
  • ½ Tsp roasted garlic
  • 1 Tsp red wine

BLUEBERRY REDUCTION

  • ½ PINT fresh blueberries
  • 2 Tbsp water
  • 3 Tbsp red wine vinegar
  • 3 Tsp sugar

PREPARATION

BEEF TENDERLOINS

  1. Mix roasted garlic and red wine together. Place in infuser.
  2. Inject mixture into several different places on the beef tenderloin.
  3. Allow to infuse for 4-5 hours or overnight.
  4. Grill steak, on medium heat, for 4-5 minutes a side for rare.

BLUEBERRY REDUCTION

  1. Place blueberries, water, sugar, and red wine vinegar in a small sauté pan.
  2. Cook over high heat until blueberries are soft.
  3. Remove blueberries. Set aside.
  4. Reduce remaining liquid until it thickens slightly. Set aside.

ASSEMBLY

  1. Spoon 2-3 oz. of blueberry reduction on plate.
  2. Place steak on sauce, surround with vegetables and potatoes.
  3. Sprinkle reserved blueberries over steak.
