BBQ Stuffed Chicken

INGREDIENTS
BBQ STUFFED CHICKEN
- 4 Medium Sized Chicken Breasts
- 4 Tbsp Olive Oil
- 4 Medium Sized Morale Mushrooms
- handful of Wild Leeks (can substitute scallions, leeks or shallots)
- 1 clove of Garlic Finely Chopped
- 1 Tbsp of Rosemary
- 4 Oz Extra-Old White Cheddar
- 1 Tbsp Montreal Chicken Spice
SAUCE
- 2 C of chicken broth
- 4 Tbsp cooking cream
- 2 Tbsp red wine
PREPARATION
BBQ STUFFED CHICKEN
- In a bowl, mix the olive oil, mushrooms, leeks, garlic, rosemary, and Montreal chicken spice.
- Cut a small pocket in the chicken breast and stuff with this mixture and the white cheddar.
- Close and seal the chicken breast pocket and grill for 5-6 minutes each side at 600 degrees (F).
SAUCE
- Combine chicken broth and cooking cream. Bring the broth cream to a boil and add red wine.
ASSEMBLY
- Drizzle sauce over cooked chicken breast and serve with fresh grilled corn and sliced grilled red and green peppers
