BBQ Stuffed Chicken

INGREDIENTS

BBQ STUFFED CHICKEN

  • 4 Medium Sized Chicken Breasts
  • 4 Tbsp Olive Oil
  • 4 Medium Sized Morale Mushrooms
  • handful of Wild Leeks (can substitute scallions, leeks or shallots)
  • 1 clove of Garlic Finely Chopped
  • 1 Tbsp of Rosemary
  • 4 Oz Extra-Old White Cheddar
  • 1 Tbsp Montreal Chicken Spice

SAUCE

  • 2 C of chicken broth
  • 4 Tbsp cooking cream
  • 2 Tbsp red wine

PREPARATION

BBQ STUFFED CHICKEN

  1. In a bowl, mix the olive oil, mushrooms, leeks, garlic, rosemary, and Montreal chicken spice.
  2. Cut a small pocket in the chicken breast and stuff with this mixture and the white cheddar.
  3. Close and seal the chicken breast pocket and grill for 5-6 minutes each side at 600 degrees (F).

SAUCE

  1. Combine chicken broth and cooking cream. Bring the broth cream to a boil and add red wine.

ASSEMBLY

  1. Drizzle sauce over cooked chicken breast and serve with fresh grilled corn and sliced grilled red and green peppers
