Ahi Tuna Melt & Wild Rice Salad

INGREDIENTS
TUNA MELT
- 1lb sushi grade tuna
- 1 loaf foccacia bread
- 8 oz Gruyere or Swiss Cheese, sliced
- 1 Avocado
- 2 oz olive oil
WILD RICE SALAD
- 2 C Wild Rice - cooked, cooled
- 1/4 C Red bell pepper- diced
- 1 Mango- sliced
- 1/2 bunch Cilantro- roughly chopped
- 1/2 bunch Thai Basil - roughly chopped
- 1/2 bunch Scallion- sliced
- 1 bunch Watercress
WASABI MAYO
- 2 tsp wasabi paste
- 5 oz mayonnaise
- TUNA SPICE
- 2 tsp White pepper-ground
- 2 tsp Black pepper- ground
- 1 tsp Cumin
- 1 tsp Salt
- 1/2 tsp Sugar - white
ASIAN VINAIGRETTE
- 6 oz Canola oil
- 2 oz Rice wine vinegar
- 1 tsp Honey
- 2 tsp Fish sauce
- 1 tsp Thai Chile- fresh, chopped
- 1 Tbsp Shallot- fine dice
- 1 Tbsp Cilantro - fine chop
- 1 Lime- zest and juice
- 1 tsp Sesame Seeds
PREPARATION
TUNA MELT
- Slice Bread enough for 4 open faced sandwiches, brush with oil and grill until lightly toasted and melt cheese
- Rub Tuna with Tuna spice and Sear on high heat on all sides until Rare, and set aside
- Slice Avocado
- Slice Seared Tuna Thinly
WILD RICE SALAD
- Combine- Wild rice, scallions, mango, cilantro, thai basil, with the vinaigrette and season to taste
WASABI MAYO
- Combine wasabi paste and Mayonaisse
TUNA SPICE
- Combine all dry ingredients
ASIAN VINAIGRETTE
- Combine all ingredients in a bottle and shake
ASSEMBLY
- Spread Wasabi Mayo on the Toasted cheese bread
- Place sliced avocado, watercress and tuna on the bread
- Sprinkle sesame seeds on top
- Plate with Rice salad on the side
