Grilled Calamari Salad
INGREDIENTS
- 1 Scored Calamari Body
- 1/2 a Chorizo sausage sliced on a bias
- Mango thinly sliced
- 1 small red chilli fine dice
- 2 Tbsp chilli Jam
- Sliced scallion
- Mache lettuce
- Olive oil
- Lime juice
PREPARATION
- Open calamari tube and square off both sides.
- Score the inside of the calamari tube on an angle in a tight checkerboard fashion.
- Ensure the calamari tube is very dry and then add a little oil, salt and pepper and place them scored side down on the grill.
- After 2 min it should be well caramelized and ready to flip for an additional 30 seconds to finish.
- Meanwhile grill 3 slices of chorizo sausage to warm.
- Remove calamari and sausage and toss in the chilli jam, then set aside.
- Add all other salad ingredients into the chilli jam bowl and toss with olive oil and lime juice.
ASSEMBLY
- Put the salad in the centre of a plate and top with the calamari and chorizo sausage.
- Finish by garnishing with chilli jam around the salad.
